My mother used to make these cassava fries when I was younger and last week I made them for the first time. I had totally forgotten how good they tasted and promised myself, and my husband, to make them more often. They are delicious as a snack, or as part of a meal with vegetables and either fish or chicken.
In this recipe they are served as a snack, with homemade chilli sauce. Excellent!
2 fresh cassava or 2 packs of frozen cassava
0,5 cup sunflower oil
Peel the cassava and cut into 1 inch wide strips. Cook the cassava in boiling water for about 30 minutes, but make sure it is still has a firm texture.
Drain on paper towels.
Heat the oil in a skillet and fry the cassava until it is golden brown. Drain on paper towels and keep warm in the oven. You can also bake the cassava in the oven. Heat the oven to 250 degrees, place the cassava on a baking tray and pour olive oil over the cassava. Bake until the cassava is golden brown.
Then it’s time for the chilli sauce.
2 garlic cloves, crushed
1 onion, chopped
2 tomatoes, chopped
a few drops of Holy Fuck Sauce or ketchup if you don’t want it to be too spicy
Fry the cloves, add the onions and fry until golden brown. Then add the tomatoes, Holy Fuck/ ketchup and stir. Boil for a few minutes until it is thicker. Add sugar to taste and turn of the fire when the sugar is dissolved.
Pour the chilli sauce over the cassava fries.
